Ingredients for about 1 litre of fresh almond milk1 large cup of almonds with zest, 5 cups water , a little organic honey

How to make almond milk at home:

Put the almonds in a large bowl and pour over them as much cold water as you can.Let them stand for at least 12 hours, or if you need to soak them for longer, change the water to fresh. Strain and place the almonds in a blender and add the cold clean water. Keep an eye on the consistency of your milk and dilute it further with water to your liking and taste if you feel the need.

Blend until you get a white, milky liquid.You can add little extras if you want to spice it up, I like the cinnamon version best. The finished drink still needs to be strained, a small hole in a cloth lined strainer is best for this. The almond milk will keep for a couple of days in the fridge.

You don't have to leave the almonds in the colander, you can eat them as they are, or you can shape them into balls and roll them in raw cocoa powder or coconut flakes for a delicious, sweet vegan dessert, or if you have a baking pan handy, you can even make almond flour from them.

You can also use your almond drink to make a delicious and healthy smoothie, so I've brought you a delicious, light peach smoothie for autumn:
Ingredients for 2 people:

4 larger peaches, pitted and sliced
- 1 and 1/2 cups almond milk
- 2 tablespoons chia seeds (optional)
- 1 tablespoon coconut oil
- 2 small pinches of cinnamon

Melt the coconut oil, wash the fruit, slice, mix the ingredients and blend. If you don't drink it right away, refrigerate it!
