As usual from the Endoblog, we're treating you to delicious, quick, healthy, vegan treats today. I can't get enough of this dish, it's a must-have at all our friend's parties, we usually have a spread-and-dip meal.
Beetroot and walnut hummus
Ingredients:
- 40 g walnuts
- live e Roman cumin
- 175 g cooked beetroot
- 1 tbsp tahini or peanut butter
- 2 cloves of crushed garlic
- juice of 1 lemon
- Himalayan salt
- freshly ground black pepper
Preparation:
Preheat the oven to 180 degrees and roast the walnuts on a baking tray for a few minutes until fragrant. Meanwhile, dry roast the cumin in a frying pan, shaking the pan constantly, also until fragrant. Then crush the cumin in a mortar or pestle.
In a stick blender or food processor, place the walnuts, beetroot, tahini, garlic and cumin, add the lemon juice, spices and blend until it becomes a thick paste. After tasting, it can still be refined, store in the fridge until ready to eat! It is also delicious with vegetable sticks, rye bread.
