Last week I put out a call for submissions: send in your recipes and we'll publish them on Endoblog! This week, we received a recipe for a very tasty dish from Marci from Budapest, whose daughter is concerned about endometriosis. Visiting once a week, on Saturday or Sunday, Marci tries to come up with dishes that her daughter can eat with peace of mind.
For the time being, Marcsi is new to this whole "endosdi" - as he puts it, there are eggs in this recipe, because he doesn't know what he can substitute for this moisturising nayag in the preparation of his dishes. But meat and dairy products are never on the family table at weekends," the mother writes with justifiable pride. Thank you very much for the recipe! I tried it and it is really delicious!:-)
Vegetable balls
Ingredients:
- one large carrot,
- a larger potato,
- an onion,
- some corn (crumbled, canned),
- 2 organic eggs,
- maize flour,
- breadcrumbs,
- spices (salt, pepper, oregano and herbs to taste),
- cold-pressed or extra virgin olive oil
Grate the carrots, potatoes and red onion, mix with the corn, add the spices, moisten with a little egg and knead the mixture into balls. In practically the same way as if you were making fried vegetables, you bread the balls of vegetables in the order flour-egg-crumbs and fry them in plenty of oil until they are a nice golden brown colour.
Marcsi served the vegetable balls with a fresh spring salad and brown rice, and they were a big hit with her daughter and her friend.
VEGAN OPTION:
I would add to the above recipe that you can also substitute the breadcrumbs with a healthier ingredient, I used organic almond breadcrumbs when I "test cooked" this dish.
You can get it in better health food shops and craft fairs, it's not too expensive, an "eight-slice" pack is around 300 forints. I bought my first bag from a farmer in Diósdi, and have been a big fan ever since. The breadcrumbs are made from chickpea flour, almonds, spices and sea salt, with a little organic wheat flour, but it can also be used as a substitute for eggs and breadcrumbs.
Nothing else is needed for breading, just this. Mix the contents of the bag with 1.4 dl of cold water to the consistency of sour cream, dip the vegetables in flour, then in the breadcrumbs and fry in hot oil.
