One recipe a week (minimum), this is slowly becoming a habit. Here's today's treat! Its ingredients won't scare you away, even if you don't like pumpkin. When it's just steamed, like in this salad, it tastes quite different, I was surprised! You can get peanut oil at larger health food stores. I recently discovered it for myself, fragrant deep brown fat, unfortunately hard to come by, I asked our health food shop owner to occasionally have one for me under the counter...:-)
Hazelnut pumpkin salsa
Ingredients:
2 dkg peanuts 2 teaspoons fresh thyme leaves, 2 teaspoons peanut oil, salt and ground pepper, 2 tablespoons 100% pineapple juice, peeled and seeded pumpkin approx. 17 dkg, bouillabaisse
Preparation:
Toast the hazelnuts in a frying pan until fragrant, stirring constantly, then leave to cool and crush in a mortar. Plane the pumpkin into very thin strips, steam gently over a gentle heat and mix with all the ingredients.
Season to taste, salt and pepper to taste (Except for the meatballs, I only use them as a substitute for bread on top of the salad. If you don't like the bulata, feel free to choose something else.) When you're ready to serve, put it in the fridge and let it sit until the next day, which is necessary to allow the flavors to meld. It's delicious with meatballs:-)
