Endometriosis diet recipe - filling summer potato salad

Quick, tasty, simple and healthy, in the Endoblogos way. This time we're treating you to a real summer treat!

Summer potato salad
Ingredients:
  • about 1 kg of new potatoes, preferably with the smallest possible grains,
  • ground pepper, Himalayan salt,
  • olive oil,
  • 3 cloves of garlic,
  • 30 dkg chard or fresh spinach,
  • the juice of a small lemon,
  • 25 dkg cocktail tomatoes,
  • 1 large head of red onion,
  • capers
Here's how to make it:

Wash the new potatoes thoroughly, boil them in lightly salted water, and then let them cool completely after draining. Then peel and dice them, as they will look best in a salad.

Set aside, and now sauté the garlic and onion with the chard in olive oil in a large frying pan. Add the potatoes, season to taste. Put in a bowl, sprinkle with the juice of the lemon, mix in the fresh tomatoes, fresh diced purple onion and the capers with their juice. Leave the salad to mature for at least an hour to allow the flavours to blend harmoniously.
