I bring you another recipe for a healthy bread topping, this one from
Fried aubergine cream
Ingredients:
3 aubergines,
4 tbsp olive oil,
1 red onion,
1 tbsp balsamic vinegar,
2 cloves of garlic,
3 tbsp fresh parsley greens,
Himalayan salt, ground pepper,
1 pritamin pepper,
Preparation:
Cook the aubergines thoroughly on all sides, peel off the skin and chop the flesh. Mix the olive oil with the balsamic vinegar, crushed garlic, finely chopped red onion, finely chopped parsley leaves and salt and pepper. Toss the diced aubergines and peppers in the dressing and refrigerate for at least two hours. Serve on toast or fresh wholemeal seed bread.
