If you're bored of brown rice

There's nothing wrong with brown rice, in fact it's a healthy and nutritious food, but many of you have written to me recently that you've had your fill of it. It's good if you can make your diet as colourful and varied as possible, so you don't get bored of otherwise great but in the long run monotonous meals. So here are a few side dish recipes you can try instead of brown rice and millet!

Mint bulgur

Cook a mug of bulgur in Himalayan salted water until tender, chop a small red onion and fresh mint to taste, then mix with a tablespoon of sesame oil and the cooked bulgur. Serve deliciously with a nice lettuce leaf!

Arrowroot with dried tomatoes

Ingredients: 3 tablespoons of coconut oil, 1.5 cups of barley pearls, 1 bunch of spring onions, 10 dried tomatoes in oil, natural herb mix to taste, Himalayan salt, ground pepper, 1.5 litres of water

Put the coconut oil in a saucepan, bring to the boil, then add the chopped spring onions and sauté for a few minutes. Add the barley pearls, season with the natural mixture, stir in the diced dried tomatoes, then pour in enough boiling water to cover. Season with Himalayan salt and ground pepper. Cook over a slow fire, stirring constantly, for 30-35 minutes until the barley pearls are tender. Keep adding small amounts of cooking water. The dish is best when it is not too dry but soupy.

 

Jerusalem artichokes with pumpkin seed oil

Cook some Jerusalem artichokes, slice them, toss with 3 tablespoons of pumpkin seed oil, a little grated ginger and Himalayan salt, and sprinkle with pumpkin seeds and fresh chopped coriander.
