We've added another summer treat to the Endoblogos recipe collection, this time we've cooked up a refreshing vegan fruit soup.
Ingredients:
- about 1 kg of pre-pitted cherries
- if you like: currants
- 4 apples
- 4 small handfuls of strawberries
- pinch of Himalayan salt
- 3 small handfuls of cashews (almonds may also be used)
- 4 tbsp wholemeal wheat flour or seed flour
Preparation:
Boil the pitted cherries and the diced apples in a pinch of salted water, just enough to cover. Blend the cashew nuts - you can soak them beforehand to make them easier - until smooth, add the flour you are using.
If you're eating gluten-free, then brown rice flour, oat flour or cornstarch is your best bet.
If you find the finished slurry thick, add more water, then mix it with the fruity base and cook for a few minutes until it has the right consistency. Add the currants and strawberries at the end. Decorate the soup as you like, cheers!
