Gazpacho with cantaloupe
Ingredients:
- 2 cloves of garlic,
- 3 small tomatoes,
- 1 tbsp extra virgin olive oil,
- Freshly squeezed juice of 1 orange and 1 lemon,
- Himalayan salt, ground pepper,
- fresh mint leaves,
- 1 cantaloupe
Preparation:
Peel the melon, cut into cubes. Put the melon, lemon and orange juice, spices, chopped garlic and mint leaves in a blender or puree with a stick blender. If you think it's too thick, you can dilute it with cold water. Serve in a glass jar, garnish with mint leaves!
For an even more special taste experience, you can also try gazpacho with watermelon!
