Vegetable ragout with mashed sweet potatoes 

his recipe.

Ingredients:

2 tbsp olive oil, 1 large red onion, 2 carrots, 1.65 dl water, Himalayan salt, 2 handfuls of red lentils, 1 kg sweet potatoes, 40 dkg tomatoes, ground black pepper, thyme, 20 dkg vegetable cheese, 3 dkg coconut oil

Preparation:

Fry the onion in the oil, add the diced carrots and sprinkle with fresh thyme. Add the water, salt and pepper, add the tomatoes and lentils and cook for about 15 minutes. Mash the boiled sweet potatoes with the coconut oil, salt and pepper. Spread the lentil casserole in the bottom of a fireproof dish, cover with the sweet potato puree, sprinkle with vegetable cheese and bake in a preheated oven at 180° C for 30 minutes until golden.
