Endometriosis diet recipes- Pistachio celery cream soup

Cream of celery soup with pistachio
Ingredients:
  • 2 celery,
  • 4 tbsp olive oil,
  • 2 leeks,
  • 1 litre of water,
  • 2 dl coconut cream,
  • 2 cloves of garlic,
  • bors,
  • 5 dkg pistachios
Preparation:

Cut the celery into cubes. Preheat the oven to 200°C, place the cubes on a baking tray, brush with olive oil and bake for 35 minutes. When ready, heat the oil in a pan and fry the onions.

Add the celery, fry, then add water and cook for 20 minutes. When it's done, let it cool and blend. To serve, sprinkle the top with the chopped pistachios.
