Endometriosis diet recipe: vegetable cutlet

Another delicious addition to the Endoblog recipe library, this time we have prepared a Vegetable Steak.

Ingredients:
  • 50 dkg carrots,
  • 40 dkg turnips,
  • 3-4 small leeks,
  • 12,5 dkg green beans,  30 dkg green peas, 
  • 1 sachet agar agar or other vegan gelatine substitute, 
  • 5 dl of vegetable stock, possibly from organic soup cubes, 
  • tarragon and other fresh herbs to taste,
  • Himalayan salt
Here's how to make it:

Clean and peel the two types of carrots, and clean the leeks and green beans.

Boil all the vegetables in lightly salted water until tender, then drain and rinse with cold water.Stir in the agar agar while it is still warm and leave to rest. When it has solidified into a thick pile, spread a few spoonfuls in the bottom of a rectangular mould and refrigerate to set. Add a few sprigs of tarragon, vegetables and herbs.

Smooth a dollop of jelly on top again, then refrigerate again until thawed. Repeat this as long as you have the ingredients, and at the end let it stand in the fridge for a little longer until it is completely solid.

When serving, place on a plate lined with lettuce leaves, so it looks good.
